Mr. McGuire's Favorite Recipes

These are dishes I'm pretty sure I invented!


Spam Manicotti

1 package (8 oz. size) manicotti shells
1 large (12 oz.) can spam
1 16 oz carton cottage cheese
1 tsp. or more Tobasco sauce
1 tsp. or more horseradish
1 egg
1 jar spaghetti sauce or 1 can diced tomatoes with chilis (pureed)
Parmesan cheese (optional)

Cook manicotti al dente, which means "not quite all the way". Put chopped spam, cottage cheese, Tobasco, horseradish, and egg in blender and blend thoroughly. Put shells in bake pan, carefully fill with filling, and top with sauce. Bake at 350° for half an hour. Top with parmesan cheese if you like.


Fish Stick Casserole

1 package scalloped potatoes (e.g., Betty Crocker)
3 cups water
1 cup milk
2 tablespoons margarine or butter
1 10 oz. box frozen peas
1 box of frozen fish sticks

Make the potatoes by the oven directions in a good sized non-stick bake pan. Sprinkle the cooked potatoes with peas. Bake at 400º for 15 minutes. Space the fish stick out over the stuff already in the pan, and cook for another 20-25 minutes or so.

 


Spinach Surprise

1 bag frozen spinach, thawed and drained
1 carton cottage cheese
2 cans vienna sausages, each sliced into fourths
1 frozen pie shell
1 8 oz. bag shredded mozerella cheese
Italian seasoning to taste

Bake the pie crust according to directions on the wrapper. Now really drain that spinach, squeezing it by hand to get the liquid out. Trust me on this, it's a lesson I've learned the hard way. Now mix up all the ingredients except the pie crust and 1/3 of the mozerella cheese, put mixture into the baked crust, top with rest of cheese, and cook for another 40 minutes or so at 400°.

 


Green Bean Chili

1 lb. ground beef
1 packet chili seasoning
1 sm. onion, peeled and chopped (or 1 cup frozen chopped onion)
1 can diced tomatoes
1 bag frozen green beans
1 10 oz. can tomato paste
1 cup beef broth

Brown meat in large saucepan. Add chili seasoning packet and 1 cup of water. While that's simmering, chop your onion. Add that to the mix, stir well and cook the onion a bit, then add everything else except the green beans. Simmer for at least an hour, then add the green beans and cook until the beans are thawed and hot. The longer you simmer it, the better it will taste!




Chili Dog Pie

2 cans chili (or 4 cups homemade chili)
16 oz. bag shredded Mexican cheese
8 hotdogs
1 bag frozen tater tots

Slice hotdogs into 1 inch pieces. Mix with chili and spread in nonstick pan. Sprinkle half of cheese over chili dog mixture. Line up tots in rows so they cover the pan completely. Sprinkle rest of cheese over tots. Bake for one hour at 375°.

I always serve this with the scoop-style Fritos.


Carribean Hotdogs

8 hotdogs
8 buns
1 sm can crushed pineapples
1 jar sliced spanish olives
Mayonnaise

Grill dogs and lightly toast buns. Spread small amount of mayonnaise on each bun, insert dog,
and top with tbsp. ea. of pineapple and olives.
